Goose eggs are selling well this year at the farmers markets.
Customers are making omelettes, cakes and boiling them for a large dippy egg. Most producers are planning to buy a similar amount of goslings for the 2015 season with some expanding their flock a little.
Concern again after last season, where average weights of geese have dropped and this continues to be a problem at Christmas as customers are looking for the larger options.
The breeders are aware of the problem and are looking at different options to try to increase average oven ready weights.
Producers are considering having some of their geese later and extending the fattening period to try raising larger geese.
